Andrew (or Anders) Andersen of Denmark

I am looking for information on my Andersen ancestors, Specifically Andrew/Anders Andersen (my great-grandfather). He was born in Denmark, we think in October of 1845. He married a woman named Carrie (b. Aug 1852, Denmark) around 1877, also in Denmark. They had at least two sons, Hans Christian (b. Feb 1878, Denmark) and Nels (b. Jan 1880, Denmark).

In 1884 they emmigrated to the United States and changed their last name to Jacobsen. My grandfather was told by his father, Hans, that they picked this name because Andrew/Anders father's name was Jacob. They took up residence in Racine, Wisconsin where they can be found living in the 1900, 1910 and 1920 US Federal Census.

Hans Jacobsen married Selma Franke in 1901 and they had one son, Frank Andrew Jacobsen(my grandfather). Nels Jacobsen married Anna (unknown) but had no living children.

Frank Jacobsen married Audrey Williams and had one child, Frank Alan Jacobsen, my father. Shortly after my father was born, between 1945 and 1948, my grandfather decided to change the name back to Andersen.

When my parents married in 1975 my father's name was Frank Alan Andersen and I was born in 1977 with the last name Andersen. In fact, I did not even know that my father or grandfather had different names until my grandfather passed away and I was helping clean out some of his belongings. I found a bible that had been presented to him from the Lutheran church he attended but it was inscribed 'Frank Jacobsen'. This is what set off my whole search.
