There are no France records to my kowledge that really go that far back. The French Revolution pretty well destroyed early church records, there are exceptions of course. Benoit is a common name, when the king ordered everyone to have a family name sometimes around 1560 or so, lots of folks took the name of Benoit after St Benoit de Nursey. This edict was to make recruting for the Army a little easier as well as tax collection. France was the first, England and other countries followed with the family name policy.
Pickins is most likly Protestant, this Benoit would be a Huguenot or French Protestant, hence this family would be on the French coast facing England.
The 1st Benoit in North America (New France) was Paul Benoit dit Livernois who came in 1653, married in 1658 so there is no Benoits old enough to marry at the time mentioned.
My indications are that your Ester Jeanne Benoit did not come to New France.
