Anne BURFORT- ca.1745 part of our family

I have a family coat of arms with the name BUFORD. (Mutare Vel Timere Sperno). It has 4 divisions (don't remember the name of the divisions) two diagonal are 3 each trefoil gold on powder blue background and two diagonal 3 each of British lions in gold on red background.

In The RAGLANDS VOL II- Charles J. Ragland Jr., I note the following lineage as:
Evan Ragland 1656-1717
John Ragland 1690-1751
m. Anne BURFORT.
Now I see that there is some difference of opinion re the spelling of Burfort- Burford, etc.

Will someone please clarify for me the difference in the families that use different spellings of the name. I know that there seem to be variations throughout the names of many families.
