I think the 1880 census provides the biggest clue on John Alexander Holley/Cathcart. I can no longer find the source to back up the assertion, but my database shows that Sarah Burns married John Holley, who was father to John Alexander Holley, before she married William Hugh Cathcart (and well before John Alexander had his last name change from Holley to Cathcart).
Your information about the children from William Hugh Cathcart's first marriage to Amanda Spikes helps explain why we no longer see GW Cathcart in any census past the 1870 census (see census data into link above). It would not be at all surprising to learn that GW (George Washington?) died before that 1880 census.
