In the colonial years in America there were many instances where the spellings of surnames were changed or mis-spelled due to a variety of reasons, including illiteracy or a clerk or record keeper's idea of how a name should be spelled.
One possibility of the origin of the name, DAFFRON, is that it is a changed or mis-spelling of the name DAFFORN which shows up in England about the 1500s. There are also many spellings like DAFRIN, DAFFON, DAFFERN, DAFFIN that appear in the colonies of America, especially in the Md. and Va. area.
It is also thought that the name DAFFORN has it's roots from France and is possibly and Anglicized version of DAUPHIN or similar French name. There was a mass exodus of French Huguenots from France to England, Ireland, Germany and America in the 17th and 18th centuries due to religious persecution. It's possible that your ancestors were from England or Ireland and still could have originated from, or descended from earlier ancestors in France.
As far as DAFFRON actually being a French name, a researcher I talked with from France says that name does not exist in France.
I am not so much researching the DAFFRON surname, but I have found Daffrons living in the same areas as the DAFFIN name I am researching (I have the same theories concerning the Daffin name origin) and have found so many spelling variations close to DAFFRON, that I wonder if somewhere, back earlier than we can prove or find existing records for, these DAFFRONS, DAFFINS, DAFFERNS, etc. were all related to some original settler.
