Yes, one encounters both the two variants you have described. But the one depicted in Siebmacher & also Riestap seems to be the most common. Both describe the arms borne by an old family from Lauterbach in the Grand Duchy of Hesse. Lauterbach is a few miles NW of Fulda, and was once held by that great cloister.

Diehm (auch Dim, Diem, Dihm und Thim geschriebe), eine alte meist dem Handelsstande augehörige Familie zu Lauterbach in Hessen-Darmstadt. – W.: Von S. und B. schrägrechts getheilt, oben enine b., unten eine s. g.-besamte Thimianblume. –K.: Zwei, rechts b., s., links s., b. getheilte Büffelhörner, danzwischen eine b. g.-besamte Thimianblume an gr. Stengel mit gr. Blättern. – D.: b., s.

Diehm (also written Dim, Diem, Dihm & Thim), one of the [oldest titled] families of Lauterbach in Hesse-Darmstadt.

Diehm – Lauterbach (Grand-duché de Hesse). Taillé d’arg. Sur azur; à deux roses de l’un à l’autre, bout. d/or. C.: une rose d’azur, bout. D’or, tigée et feuillée de sin.: entre deux prob., coupées alt. d’azur et d’arg.

Diehm - Lauterbach in the Grand Duchy of Hesse.

Shield parted per bend sinister silver (or white) top, blue bottom, with 2 roses one on each half (of the opposite color); crest: foliage & a helmet surmounted by (buffalo) horns of blue & silver (white) with a rose in the midst.
