I discovered my error. According to the 1850 and 1860 censuses, there is a Susan listed, born 1833, that I had listed under Joshua's brother Richard's family for some reason. Richard's family is listed on the same page in 1850. This Susan and your Sarah are surely the same person.
On the 1860 census, she is listed with Joshua and Catherine's family, at the end, with a 3 year old boy listed after her, whom I guess is her son.
Of course, these censuses don't list relationship; it would be also possible that she is a daughter-in-law (even at age 17). That would explain her birthdate being so close to John's. She and John are both listed as age 28 on the 1860 census, but they are not grouped together.
