One story related to me has to do with the change of name of a branch of the Doiron family in NB/NS to Gould and Gold. From this GENFORUM I see that there is some fact to this story. The story told to me, related that the reason for the change, was due to that particular branch dealing illegally in gold with the British, something against the law at the time. Thus, their other kin started calling them gooold, a french prononciation of GOLD. It appears that the name stuck with some variations.
