Possible Parents for Dominic Engelmann and Elizabeth Ring

I have been searching for Dominic and Elzabeth's parents for a long time, and while I can't prove these are them, here is what I presently know, and suspect about their likely parents.
The search for Dominic Engelmann and Elizabeth Ring’s parents.
If Dominic and Elizabeth followed a traditional naming pattern, then Dominic’s parents would be Urban (1st son named after fathers father), and Marie Kathryn (2nd daughter named after fathers mother). Meanwhile Elizabeth’s parents would be Barbara (1st daughter named after mothers mother), and George (2nd son named after mothers father). For now I am going to ignore the unknown child who died before 1900.
Urban is an unusual enough name, that I have only found a couple of records that fit. One census:

**Some records list his name as Urban, but if you look closely you can see the us hidden under a notation.
And a couple of death certificates:
Peter Engleman b: February 3, 1856 in Luxenberg d: November 19, 1918 in Salt Lake City, Utah
Parents listed as Urbanus Engleman (b: France), and Catherine Cook (b: Luxenberg)
Margaret Peake b: February 29, 1874 in Aurora Illinoisd: March 7, 1922 in Salt Lake City, Utah
Parents listed as Urbans Engelman (b:Luxemburg), and Catherina Koch (b: Luxemburg)
I also found an 1880 census, that I think has been misread (Urbanus is being read as Norbaum). I need to see an actual scanned copy of this to confirm it.

Between these records we can account for 5 of Mary’s 7 children (1880 census). Dominic was born April 1858 in Luxembourg (Urbanus and Catherine were still in Luxumbourg then, and we have a gap in the children about then), and he immigrated in 1863 (Urbanus and Catherine came over in 1862, but their daughter Catherine was born 1865 in Luxumbourg). Could Dominic be one of the two missing children? The 1870 census is the best bet to confirm this, however I have yet to find any of the Engelmanns in the 1870 census.
Another interesting fact to consider is that Around 1890 Peter Engleman (son of Urbanus and Catherine) married Elizabeth Clara Behrs (born: July 7, 1859 in New York. Daughter of John Paul Behrs, and Elizabeth Mertis (From her death certificate)). In the 1880 census, Dominic is living with the Behrs family in Chicago. The Behrs family includes John and Elizabeth Behrs, and several children, including Lizzie (born ~1863 in Illinois). While this is not a perfect match it does make me suspicious, especially since Behrs is not a common name. Also, in 1881 he married Therese Behrs (I still haven’t been able to figure out which of the Behrs girls this was).
Moving on to the Ring family.
Searches for George and Barbara Ring give some interesting results:

Elizebeth is close to the right age for Elizabeth Blanch Ring (1 year off), and if they followed tradition, then here parents have the right names, Geo (short for George?), and Barbara. I suspect this is the right family. If I can find either Elizabeth and Dominic’s marriage licence, or Elizabeth’s death certificate, perhaps those will include some family names (the 1870 census could also be usefull).
Anyone have any thoughts, or more information they would like to add?
