While doing some research on Westmoreland County, PA, I recently saw an 1850 Census entry for Fairfield Twp for the family of Robert (50) & Mary Snyder (38) & children Adam (12), Charles (10), Elizabeth (8), & Margaret (3). There were also three Enos children living with them:
Joseph Enos (13), Rebecca (11) & Henry (7). Could this Mary Snyder be your Catharine's daughter?
I am interested in the Enos children that were living with the Snyders as I have a Sarah Enos (18 on the 1850 Ligonier Twp, Westmoreland Co Census) that married Samuel McDowell of Fairfield Twp. She & her younger brother Henry (also aged 7 - perhaps listed twice, once in the household with Sarah & also in the Snyder household) were living with the family of Henry and Jane (Barr) McDowell (I haven't been able to find out yet what connection Sarah had with Henry & Jane McDowell yet). There was also a "Mr. Enos" (aged 44) living in a boarding house in Fairfield at that time.
I haven't been able to find any "Enos" listings in the 1840 Westmoreland Census yet; however, there was a Thomas Enos family listed in Ligonier Twp in 1830. Do any of these names tie in with your family?
