In the 1881 census there was a John W. Fishwick, 11 years old, living with his parents (William and Jane) at 39 Queen Street, Sunderland.

William was a shipwright, and born in Stockton around 1832/33. I suggest that your next step might be to find the marriage of William and Jane, and as there was an older brother, Joseph born around 1864/65, suggest that you look in the GRO indexes for the first half of the 1860s.

Please do let us know if you find them. By the way, Jane was born at Aswith, Co. Durham, but of course she may have moved from there before she was married.
