I hope the following will help a little. As far as I can tell the Fishwick surname (which I've been researching for more than 25 years now) originated only in one place - the district of Fishwick by the River Ribble in Preston (in the county of Lancashire in northwest England) - although there have been branches in various other parts of the country for several centuries. Records of Fishwicks around Preston (which is about ten miles from where I now live) go as far back as the 1200s, although there are many gaps and nothing like a complete, verifiable family tree.
Even after all these years of searching, my own links back from my mother (born Alice Fishwick in 1907) are solidly-proven only to around 1700. Before that there is a lot of hypothesis and "intelligent guesswork."
Do you have any idea at all (even if it's vague family legend) about when your ancestors migrated to the USA, and where they first landed? That might be a starting point.
This sounds like a challenging piece of family research. As a "Fishwick fanatic" I'll be glad to help if I can.
