Why do birthdates and places vary so much?

I have been recently trying to double check information about births, etc. with the Essex, England parish records that are online at Seax. I can't seem to verify those with the many differing genealogies and books I have found online about the Foote family. One place shows Nathaniel Foote being baptized in St. Botolph's and others at Shalford. I have not had any luck finding this information. Could someone share why they believe their information is correct?
One thing about St. Botolph's is that the records at that parish were burned in a fire in 1666, and so Nathaniel's record wouldn't have been there anyway.
I am hoping someone can steer me in the right direction here.
