I was just surfing today and found your query.
I am a decendent of the Gadberry family and the Jones family.I have researched both families and I believe the Sandy you refer to in the 1870 KY census is Sarah Jones Gadberry's nephew, Sandy K Jones. In the 1880 KY census he is referred to as Sunny, still living with Andrew Gadberry and family.
1900 census; Iowa, Marion Co, Perry township, Sandy K Jones is living in the household of Enos and Sarah Carter Jones. Andrew and Sarah Jones Gadberry lived nearby. Enos and Sarah migrated to Visalia, Calif before the next census, I believe. Enos and father Elisha are buried in a Visalia cemetery.
If this is the Sandy you are looking for, perhaps he moved to the Visalia area also as I know there were no Jones or Gadberry relations living in the Percy area after 1910, with the exception of LuAnne Gadberry.
