Gillow or Gelow or Gilow or Gellow? A question about spelling

I'm just beginning to research supposedly German Gillows of the 1800's who came to Canada. The problem is, very few Germans used this spelling.

Can anyone help me with the history of the spelling of the name, and whether I should be searching a different spelling?

My Great-Grandmother was Augusta Rosetta Sophia Gillow, Born August 11, 1873 in Ontario, Canada.
