Joseph b SC to NC to Palo Pinto Co TX

I am researching Joseph Goodrum bc 1825 Union Co SC. Lived in Rutherford Co NC after he m. Ellen Catherine Hamilton. They moved to TX after they had a large family. He supposedly died in Palo Pinto Co TX. I have found the family on all of the censuses except the 1850 & 1860. I am particularly interested in finding his family on those 2 censuses. It is possible that Joseph is the one in McDowell Co NC on the 1850. Something about the 1870 & 1880 Rutherford Co NC censuses seem odd. He was 45 and Ellen was 40. They are shown with a dght Mary age 21, son John W. 4 and Elizabeth M. 2 plus possibly Ellen's mother, Elizabeth Hamilton 82. On the 1880 Rutherford Co NC census for this family shows Joseph as 54, Ellen 50, Mary 31, John W. 13, Elizabeth M. 12, Samuel 8, and grandchildren: Frances 12, Edward 10, Margaret 7, and Charles O. 1. I know that on the 1900 Cherokee Co TX census the head of the household was Sam Goodrum 28 b Sept 1871, father Joseph 75, mother Elland 69, brothers Ed 26 b Sept 1874 and Charley 21 b Dec 1878 (plus Sam's wife and children). Does it seem likely that they would have their family begin with Mary then skip 18 yrs before having John W. ? I hope the 1860 census will show other children btw Mary and John.
