Goolsby / Goldsby

I've recently begun compiling my line of Goldsby's and when I get back several generations, I am running into the name being spelled Goolsby as well as Goldsby. And I've also seen the name Gouldsby.

This makes things pretty confusing, me being a novice at this, and makes me wonder if I am running down the wrong paths at times.

Can anyone shed any light on what appears to be an evolving spelling of the our surname many years back. Leaving us today with Goldsby and Goolsby lines?
