Kathy -- My wife, Merle Heitman, recently found that her St. Louis Heitman ancestors spelled their name Heytmann. We've seen graves and death certificates. This particular line came from Czechoslovakia via the port of New Orleans, and settled in the Soulard area of St. Louis (now half wiped out by I-55). Names in many of our lines changed seemingly at random; I'd suggest checking any variations. The St. Louis County Library in Kirkwood has a great collection of microfilms, old city directories, newspapers, etc. We spent many hours there (from Colorado) before we latched on the the Heytmann spelling.
