According to the book "Duden. Familiennamen - Herkunft und Bedeutung von 20,000 Nachnahmen" (available in US through, Henk(e) is a "Koseform von Heinrich zuruckgehende Familiennamen".

"Koseform" means "affectionate name" or "pet name". The book goes on to note under "Heinrich" that the name was very popular . . .
