This may not be the information you want but ..
I know of a Joseph Moorhouse (clothier from Upper Thong) who had a daughter called Sarah. Sarah Moorhouse married Paul Kay (son of Simeon Kay)in 1843 and this Joseph could be the same person as your Joseph who married 20 yrs earlier. I do not know of an Esther in Paul Kay's line which may be just as well as it would have meant a marriage of close cousins I think.. alternatively Sarah could have been the first born (she was born in 1824) of the earlier Joseph and thus a sister of your later Joseph...
In respect of the witnesses being the father/mother - in my very limited experience I have not seen this before and it could be that they were just family relations.. there are so many Kay and Moorhouses in that area - the only real way to pin this down is to actually get the marriage certificates and then the birth certificates to see what matches up..
