The "ey" and "y" suffixes were associated with religioius denominations: Catholic and Protestant. Often the spelling of the names were changed to prevent social religious persecution. This occurred (and is still occurring) to a great extent in Ireland. When immigrants came to the new world they were more free to pursue their chosen religion, and as a result opted to change the spelling of their names. (I can't remember, but I think "y" is associated with Protestants - can anyone confirm this?)
