LeBeauf (originally LeBeouf/LeBoeuf)

I am looking for family members who spell their name as "LeBeauf". I've found that our family name was originally spelled "LeBeouf". Some documents showed "LeBoeuf" as the spelling as well. My grandfather was Eugene LeBeouf/LeBeauf, Sr. born on May 13, 1903 and died on April 30, 1977. He was married to Dora Triche. My great-grandfather was Robert (pronounced Ro'bere) LeBoeuf and great-granmother was Mary Jane Billon of St. James. My great-great grandparents were Florestan LeBoeuf & Philomene Joseph. I was told that my grandfather was born in Bayou Goula, LA. However, I cannot find any info for that small town. My family is Creole and throughout the years some family members chose white as their race, while others chose black. Since family members chose one race over the other, it is a little hard to link together. I am also trying to find out at what point and why our last name was changed to LeBeauf. If anyone has any information, please contact me.
