William Nellis b 1857 in Luxembourg, to Wisconsin USA

My great grandmother is Sadie Nellis, born in Wisconsin and adopted by William Nellis of Luxembourg and wife Rose Thibeau of Little Chute, Wisconsin. She always had kind words for William and Rose and the way they cared for her and raised her.

I can't find any solid information taking William to Luxembourg and ancestors before him. I assume he likely anglicized his name, which could have been Wilhelm or something. I have his date of birth as 18 Nov 1857. Can anyone help me with this directly, or at least give me an idea of what resources to look at?
