Janet, I was gong to suggest that you visit the Manchester Genealogical Society, but if you've already been in touch with them, that may not be necessary.
If there's a gen society in your area, or a good library, you may wish to check out the DROUIN male/female listings of QC marriages. That may give you a start.
As for birth dates in QC, you can always get in touch with the QC gov for copies of birth certificates, but that'll cost you plenty:

I have a list of QC DEATHS (1926-1996) in which I could look up certain persons for you if you know they died in QC during that period. DOB's are often indicated, but are not necessarily exact. This list was made up from old hand-written records, which were sometimes difficult to decipher.
I own a few Manchester, NH Catholic church registries (marriages & a few baptisms), in which I can look up info for you if your ancestors were in Manchester.
The CANADA ARCHIVES contain quite a bit of info in digital format, such as enlistment papers of WWI Canadian soldiers. They indicate the DOB, present address, etc. & you can download upg copies of many of them:

Not knowing where you'll be heading in Canada, I can't suggest any place in particular for you to research except local libraries & genealogy as well as historical societies.
