I found them!

In the 1880 Census, the index has Stephen W. Mathers listed as LW Mathews - he is listed there with his wife Drewcilla and his children A.Ida, John....

In 1900 Census John W. Mathews is listed as head of household and his wife Florence and all his kids. I'm not sure how Florence was still listed as Florence's gravestone says she died Feb 1900.

1910 the name changes to Mathew, still listing all original kids plus a few more. I believe he remarried a "Mattie Emily Lee"
