Mitz/Metz from Prussia to Chicago

I am looking for Mitz' who settled in the Chicago area. Names and dates I have are Catherine Gall (1888) born in Illinois, but both parents born in Prussia and spoke Polish; she married Anthony Mitz (1884) also born in Illinois and both his parents were also born in Prussia and spoke Polish.

Catherine had two siblings that we know of: Mary and Willie. Anthony's siblings: Mae, a nun who left the order to get married to a physician whose first name was Thomas,and they had a daughter, Rose; Eleanor Mitz, had a daughter named Sylvia; and Monica, also known as Minnie. No other info. Have also found Anthony listed at "Metz" in one census.

Any assistance greatly appreciated! My mother-in-law is pretty closed lipped about her family.
