Etienne, I believe Georges and Sarah were living in Marion County, Tennessee, USA, during the 1900 Federal Census. That page is shown in very poor condition on the Internet, probably because of age. However, there is one family, only a couple of the first names can be seen very well, that looks like it could be your Georges and Sarah. The husband was born in 1864 and his wife was born in 1869. They had been married about 14 years and had 7 living children out of 8 born. The children's ages are: Daughter, 13; Daughter, 11; Son, 10; Son, 8; Son, 4; Son, 2 and Daughter , 4 months. The names are almost entirely blotted out but I can see that the wife's name looks like "Sarah" and two of the boys names are Georges (the one 10 years old) and another that looks like Oscar (the one that is 4 years old). They are listed as born in Tennessee and the head of the household is working as a coal miner. I can't be sure this is the family you are looking for but it could be of interest. To find this look at the US Census of 1910, Marion County, Tennessee; Civil District 13 (Roll T623 1587, Page 3B). Good luck in your search!
