Nan,
Did some more hunting. CHeck this site:
http://mywebpages.comcast.net/jerseyite/News/jan1884.htm

If you click on your "edit" icon and "find on page" the word "pleasant," you will see several marriages taking place in Mt. Pleasant or one of the spouses is from Mt. Pleasant,

I checked the 1860 census -- Mt. Pleasant is listed as a township in the postal area of Frenchtown, NJ (Hunterdon Co.), but only has 3 pages of images!! I can't see the top of the page clearly, but it looks like "Cottage of Mt. Pleasant" or "College of Mt. Pleasant." Perhaps this was a school/campus??

Anyway, I really think you should check with the municiaplity of Frenchtown, Hunterdon Co, NJ. Seems Mt. Pleasant got absorbed into it. Perhaps they can tell you a valid reason a minister from Rahway would be officiating.
It could be it was the wife's minister?? Or the nearest whatever faith it was minister? Or the minister is related? There may be a perfectly valid reason for a Rahway minister to be there.
