Help finding Dopkins/Dopking/Dobkins

I have several ancestors living in Hoosick from roughly 1760 through at least 1820. I have names, birth dates and death dates of some, but not all. I know that Frederick, Henry, Nathan, White, and Nathaniel lived in Hoosick as well as their families, but I do not know the names of ALL of their children. I am interested in finding all people with surname of Dopkins, or Dopking in Hoosick. Some census materials incorrectly show the surname as Dobkins.

Since census materials only show names of head of household, is there any way of finding births and deaths recorded in the Hoosick area between the mentioned time frame?
