It appears the Watkins Johnson who married Elizabeth Moorman was a DIFFERENT Watkins Johnson, born ca 1803. It is not too surprising there would be more than one Watkins Johnson wandering around because at least 6 of the central Virginia Quaker Johnsons had married women named Watkins.
