If there's no obit for Jane (nee Denton) Stroup, that suggests to me that by the time she died in 1885, none of her children bothered to send notice of her death for publication in Madison Co. If that's true, I suspect none of their children who died after Jane's death would have been mentioned in a Madison Co. newspaper. There were, however, two of Joseph and Jane's children who died before Jane did: Elizabeth Jane (nee Stroup) Hunt and Joseph Stroup Jr. But, just for kicks, I'll send you a family group record for Joseph and Jane Stroup's family and see what turns up. I know for sure that I'd like to get a copy of Joseph Stroup's obit.
As for wills, I found nothing in the Probate Ct. Index for John Stroup Sr. who died in 1832. I'll scrounge around the LDS Temple microfilms to see if there are deeds or some such transferring title to his land to wife and/or children.
