Are you sure about your dates? if born in 1802 and married in 1815, she would only have been around 13 years old...awfully young to marry.
As you apparently suspect Susan to have been born in Chester Co, Pa. have you looked for Huttons in the census for 1810? Susan wouldn't be enumerated by name, but she would be listed by age and sex, in the household of her parents. I'd think this would be a place to start.
Have you checked with Pike Co, to see what sort of vital records they might have? As you seem to know Susan's death date, how about local newspaper obits?
