Just who was Sir John Paulet II ? Can U Help?

I have only just begun my research on my 17th Great Grandparents. John Paulet II & Elizabeth Creedy. I do have some information on John - see below.
b. 1349
Rhode, Somerset, England
d.November 28, 1391
s/o John Paulet I & Elizabeth Reyney
John Married Elizabeth Creedy of which 4 children were born. Elizabeth was the daugther and heiress of Sir John Creedy, of Creedy, Devon.
Sir John Paulet; knighted by Henry VI.

I would love to know more about John's life and where he is buried. There is so much out there on the subject, that is confusing to know where to start and how to translate it into lamman terms. Any suggestions or information would be ever so kind of you. Thank you in advance and God bless you & yours.
