This major Canadian line began with Jacques Payant dit Saintonge who came from France in the 1690's. A significant majority of these people used Saintonge as the family name, and later modified that to St. Onge.

There have also been other Payants who have come from France in more recent times, but their number is relatively small.

I know of no connection between these French lines and Spanish/Mexican ones.
