Jacques (Jacob)St. Ores

My great grandfather was Charles Jacob St. Ores. His father was Jacob Grant St. Ores (b. 7/15/1821 in Jefferson Co., N.Y., died in 1852, married to Lucy Ann Clark in Lima, Sheboygan Co., WI.). Jacob's father was Peter St. Ores (born 10/14/1788 in New York, died in 1841 in Iola, KS and married to Sophronia/Sophie Grant).

Family story has it that Peter's father was Jacques (Jacob)St. Ores. Jacob thought he was born in about 1754 in Quebec. He believed he lived in St. Ours Canada about 15 miles from Sorrel. He left Canada in about 1776 and fought, with two brothers, in the American Revolution.

Family story also has it that his father was Dominique Payan born 11/1724 and mother was Marie-Louise Laporte.

I can't find any reference to Dominique having a son named Jacob. Is he perhaps Joseph? or a descendant of one of the other many Payans?

Any information would be appreciated.
