I think to say that censu takers bastardised the name is a bit harsh. Rather, I would say that the dialectal pronunciation of the name Pelletier, Peltier, was fairly accurately recorded by the record keepers.

It was quite common for a T to be pronounced as a K in some French dialects.

Hence Pelletier, Peltier = Pelky, Pelkie
Gauthier = Gokey
Trottier = Trokey
Cloutier = Clookey
Berthiaume = Barcome

Similar dialectal pronunciations
give us "torquière" for tourtière and "quins" for tiens in popular French Canadian speech
