John and Ellen Penketh

Ellen (Nellie) Penketh m/ Thomas Wardle 26 Nov 1898 in Salford. May also have used "Sarah" according to family oral history. She reports being 20 years old on that date,so b. ca. 1878 to John Penketh (deceased by her wedding day)who was a "Waiter". An Ethel Penketh witnessed the marriage.
There is no matching Ellen Penketh in the FreeBMD index. An Ann Ellen b.Nov 1877 has a George Penketh for a father. The only "Ethel" in the index is an Ann Ethel Penketh, b. Prescott in 1889, so Ethel is either a young witness or a sister in law.
There are a few John Penketh dying between 1878 and 1898, all of them a bit old to have fathered a child ca 1878, but anything is possible.
No John Penketh, waiter or anything like that is listed in the 1881 census index, and the only Ellen, about 2 years old, is one living with an Uncle and Aunt, William and Emma Hardman in Lancashire.
So, anyone have any additional information on either John or Ellen? I'm fairly sure they are linked to the Penketh family from Penketh, some children still living remember going "Home" to a large house there before WWII.
