Mary Persse search

My great grand mother was Mary Persse and I am on seemingly hopeless search to learn more about her. All I know for certain is that she married William Jones and they lived in Dublin, Ireland, and had three sons: Jack, Robert and Samuel Jones. Mary died giving birth to Samuel on June 18th, 1864. William died quite shortly afterwards from pneumonia brought on helping to rescue horses trapped in their stables during a flood. I understand the boys were brought up by their grand mother and an aunt. I don't know from which side of the family these good women came.
Family history suggests that Jack went to Canada and either married a girl named Coral, or had a daughter named Coral. Robert and Samuel went to Western Australia. Samuel was my grand father.
The information I have about Mary & husband William are shown on Samuel's marriage certificate.
It's such a tragic little story, and I would really love to learn who Mary's parents were and at least give her a family. Can you Help??
