My mother was a Plourde so I have been looking for this same data for a number of years. Pierre Plourde and Marie-Ursule levesque are my maternal direct line 6th great grandparents. None of the principal secondary sources such as Jette, Tanguay, PRDH, Drouin, and BMS2000 have been able to obtain and publish precise birth/baptism dates for Brigitte and Ursule. The "Genealogie des Familles de la Riviere-Ouelle" published in 1908 by L'Abbe Adolphe Michaud does not contain their birth dates either. All of these principal sources would have had access to original data in the Actes and Registers if the data still existed in the 1800s or 1900s. The Registers were probably lost at some early point in time and cannot be re-created. The best birth estimates calculated from their death data is as you have stated it, i.e., 1829/1830 and 1830/1831.
