Because the 1930 census shows George first married at 21 and Catherine first married at 36 I suspect Catherine was not the mother of Helen age 34 at the time.

The 1900 census shows a George W. Poulton, born Oct 1867, married 5 years, wife Emma L., born Aug 1872, daughter Ellen N., born May 1896, father Charles, born Aug 1841 living in Philadelphia.

The index of Philadelphia marriages shows George Washington Poulton marrying Emma Bladwin in 1895 and George W. Poulton marrying Katherine Schaefer in 1912: http://search.labs.familysearch.org/recordsearch/start.html?datestamp=1195390820093#c=1388247;p=collectionDetails

I could not find George or Helen or Ellen in the 1910 census. Helen and Ellen were sometimes used interchangeably.

I suggest getting George's obituary. Check with the Philadelphia Free Library to see if they can help you with that, assuming he died in the Philadelphia area that is.
