There are probably others better qualified than me to give you information about the Rex family. From the content of your message I am assuming that your husband's Rex antecedents come from the English line and not from the Rex line from George Rex in Knysna.
When writing her book George Rex: The Death of a Legend in 1974 Prof. Ian Christie researched George's background in England. An article appeared in Notes and Queries in about the same year.
Most of what I am including here comes from that source.
George's grandfather was Thomas Rex, a distiller. His only son was John Rex who is recorded as being a distiller at 87 Whitechapel in the 1770's. John Rex died in about February, 1792. He had been a man of means. He left his property to his daughter Sarah and his son John, George (of Knysna) having already been well provided for. John Rex jnr. had been born in 1768. More than that I cannot tell you but I am sure that you would find the record offices in London most helpful. Good luck in your search.
