I think he was in OR by 1900. In the 1900 census for Carson, Hilgard, Perry & Starkey districts, Union Co, OR there's an Edward SANDERS, age 33, b. IL, father b. TN, mother b. MO, living as a boarder in the home of Josh & Kittie GRAY. TN & MO are the places of birth your Edward gives for his parents in the 1920 census.


In 1880 in Littleton, Arapahoe Co, CO there's this family that's a possible match:
SAUNDERS, J.E. age 43 b. TN, father b. VA, mother b. TN
wife Frances O. age 38 b. MO, father b. NY, mother b. CT
son Elvin L. age 19 b. IL
son George T. age 15 b. IL
son Edward O. age 12 b. IL
son R.R. age 10 b. MO
son Clarence C. age 8 b. MO
dau Leadelia age 1 b. CO
