Having found and studied the 1850 census listing for Jacob Sechrest/Seichrist that you referred to in your post, I have a speculative alternative to your quite logical interpretation of the listing. I don't have any proof for my speculation, but it does fit with other Seitz info in my possession.
But first, are you aware that Benjamin F. Myers, husband of Salome, is a Seitz descendant? His mother is Elizabeth Seitz, daughter of John Seitz Jr. and Eva Stabler of York County and granddaughter of Johannes Seitz and Catherine Rueb, immigrants to York County from Adelshofen, Baden. If I am correct in my speculation, Saloma's mother was first married to Elizabeth's brother, Joseph Seitz.
Now to my speculation: I wonder if the 1850 census taker misused his ditto marks. He lists the children in Jacob and Catherine Seichrist's household by age. Barbara, 16, Henry 12, Susan Sides(Seitz), 8, Saloma, 4, and Emma 1. He has ditto marks for everybody's surname but Susan. What if he meant for the ditto marks on Saloma and Emma to refer back to Seichrist? That would make Barbara and Henry the children of Jacob by his first marriage, Susan the daughter of Catherine by her first marriage and Saloma and Emma the children of both Jacob and Catherine.
Now to my Seitz info. According to May Albright Seitz's 1940s compilation of data primarily from the research of Dr. William C. Seitz (1864-1935), Joseph Seitz was born 16 March 1816 and died in 1842. He married Catharine Schneider (no dates given). Both are buried in Mt. Zion United Evangelical Church Cemetery (I have not found an online listing of burials there). Joseph and Catharine had two children, Celesta, who is listed as deceased, and Susan.
Susan Seitz was born 11 June 1842. She married Jacob Butcher and had seven children. The only one I have a birth date for is the second child, Vinnie, who was born 28 Jan 1875. This suggests Susan was married after the 1870 census in which you found her in the Myers household.
May Albright Seitz's compilation also lists the marriage of Benjamin F. Myers to Salome Sechrist, but doesn't have any further info on Salome.
If you have followed me, I am suggesting that Jacob Sechrist is probably Salome's father and that Catherine married Jacob between 1842 and 1846, following the death of her first husband, Joseph Seitz.
