Thanks very much for your information on the Zentner/Sentner history. I appreciate having it.

Because the Zentners you found in the Dunkirk-Fredonia, NY area arrived in 1801/1802, it seems clear my PEI, Canada Sentner family did not come directly from the NY group. Although their history is not well known, the family on PEI was apparently there as early as 1785 (see "An Island Refuge" by Orlo Jones and Doris Haslam, 1983), and in Shelbourne, Nova Scotia prior to that. Philip Sentner had received a warehouse lot in Shelbourne as a United Empire Loyalist and, therefore, was presumably involved in the American Revolution on the British side of the war.

The PEI family's tradition is that the Sentners were of "German-Dutch" origin. That is roughly consistent with your note that the family's original origins are apparently in Switzerland.
