Hi Kay,
I saw your message and thought that maybe I could give you some help (or least a possibility that may help).
There is a Frederick Shofner who married a Euphemia Coble (it seems that Fred's wife's name is similar enough that this may be the same couple). I don't know much about Fred and Euphemia (no dates) except that Fred was the son of Peter Shofner (1784-1873) and Mary (Polly) Albright). Peter was the son of Frederick Shofner and Christina Cook. The dates seem to calculate out to fit roughly in the period you're looking at. So I suspect that this is the family you're looking for. Hope this helps!
