Beverly,
I reviewed the 1870 US Census for Monticello PO, Lewis Co, Missouri and I think that this still is your Gerlach SPATH. Here are some corrections to the enumeration, I read age incorrectly.

on 24 July 1870 p16. or p699 dependent on numbering system
SPATH, Garlock, 42, m, w, farmer Prussia
SPATH, Christina, 39, f, w, keeps house, Prussia
SPATH, John G. 18, m, w, works on farm, Pennsylvania
SPATH, Geo. R. 14, m, w, works on farm, Missouri
SPATH, Jane, 12, f, w, at school, Missouri
SPATH, Fred ? 10, m,w, Missouri
SPATH, Margaret, 7, f, w, Missouri
continued on next census page?
OVERMAN, Altonah ? 5, m, w, Missouri
OVERMAN, Emmet I, 2, m,w, Missouri

Then in the 1860 US Census Highland Township, Lewis Co, Missouri, on 30 August 1860. p. 22 lines 18-22
Gerlack SPATH, 34, m, farmer, Germany
Catherine SPATH, 24 or 29? F, Germany

Wm. SPATH, 8mo, m, Missouri

Then in the 1880 US Census Highland Township, Lewis Co, Missouri on 12th-15th June 1880,p 20 lines 3-10.
SPATH, Garlic, w, m, 52, self, farmer, Prussia, Prussia, Prussia (transcriber read his name as Garlie)
SPATH, Catherine, w,f, 40 or 48?, wife, keeping house, Prussia, Prussia, Prussia
SPATH, Mary, w,f,16, daugter, Missouri, Prussia, Prussia
SPATH, Henry, w,m, 14, son,farmer, Missouri, Prussia,Prussia
SPATH, John, w,m,11, son, farmer, Missouri, Prussia, Prussia
SPATH, Charlie,w,m, 9,son, Missouri, Prussia, Prussia
SPATH, Geo., w, m,6, son, Missouri, Prussia, Prussia
SPATH, Kittie, w,f, 2, daughter, Missouri, Prussia, Prussia

1880 US Census Salem Township, Lewis County, Missouri
8 June 1880 p.15 or p132, line 26
SPATH, Edward, w,m, 24, farmer, Missouri, Prussia, Prussia

1880 US Census Salem Township, Lewis County, Missouri
11 June 1880, p.17 or p134, line 42
enumerated with the Joseph Johnson family
SPATH, William, w,m, 20, servant, laborer, Missouri, Prussia, Prussia.

I am not related to any of these persons. I just enjoy doing the research, especially for SPAETH type names.
Regarding the 1850 Census and the Gerlach SPATE being in St. Louis, possibly he came out ahead of the family to seek a location.
