There are two Thoms families - one Scottish and one German. Be careful you know which one you are looking for. John (Johann) Thoms was passed on for three generations in my family from Bruel, Retgendorf-Bucholz and Dobbertin, in Mecklenburg-Schwerin Germany. There are also Thoms branches from Schleswig-Holstein and Danzig (now Gdansk Poland) with the oldest branch being from Schleswig-Holstein which went back and forth between Denmark and Germany. The Scottish Thoms family is from north east Scotland. I am not aware of any connection between it and the German Thoms family.
