The best resourse in Knoxville in my opinion is the East Tennessee Historical Library where the McClung Collection is also kept. The library is in uptown Knoxville. It is huge and full of all kinds of genealogy information including family books, city directories, newspapers on microfish, census records, historic records, etc.
